Let's start with potatoes

I'm a big fan of simple recipes. If it is something that is going to take a lot of time or make a big mess I am not terribly interested, it stresses me out. I want this blog to be about easy but healthy food. Actually healthy food, not the pretend kind. I tend to lean towards a more vegetarian (sometimes vegan) diet but I will not give myself a label at this time. I find it difficult to follow one mantra and would like to just see how it goes.

Anyways, yes, straight forward recipes that involve ingredients that is easily attainable but will still heal and strengthen. 

Let's start with potatoes.


I bought these at the local grocery store the other day. The purple ones are so pretty, this photo doesn't do them justice. 

I washed them, cut them in half, tossed them in olive oil and laid them out on a cookie sheet. Turn the oven to 400 and they take about 40 minutes, flip them about half way through.

They're good with butter and sour cream or vinegar and salt and pepper. 

Don't drown them in ketchup though, that's just rude.
