Quinoa

There are a crap load of quinoa inspired salad recipes online. So I took a bit from here and there and came up with my own! It's not as pretty as some... needs more green but it tastes really good and it was easy. Like, open a couple of cans easy.



Recipe:
1 can of corn
1 can of chick peas
1 cup of uncooked quinoa (and then cook it...)
1 red pepper, diced
some green onion
clove of garlic

Dressing:
oil and balsamic vinegar to taste (sorry, i free pour)
squirt of lime or lemon
pinch of brown sugar

Throw ingredients in a bowl (the cooked quinoa's heat softens the raw pepper which is nice). Mix the dressing separately and stir it all together.

On the days I don't eat meat and what not this type of salad is a good protein kick. Keeps me from flopping over (literally).

Let's start with potatoes

I'm a big fan of simple recipes. If it is something that is going to take a lot of time or make a big mess I am not terribly interested, it stresses me out. I want this blog to be about easy but healthy food. Actually healthy food, not the pretend kind. I tend to lean towards a more vegetarian (sometimes vegan) diet but I will not give myself a label at this time. I find it difficult to follow one mantra and would like to just see how it goes.

Anyways, yes, straight forward recipes that involve ingredients that is easily attainable but will still heal and strengthen. 

Let's start with potatoes.


I bought these at the local grocery store the other day. The purple ones are so pretty, this photo doesn't do them justice. 

I washed them, cut them in half, tossed them in olive oil and laid them out on a cookie sheet. Turn the oven to 400 and they take about 40 minutes, flip them about half way through.

They're good with butter and sour cream or vinegar and salt and pepper. 

Don't drown them in ketchup though, that's just rude.
